Tomato and Fennel Salad
serves 4
Ingredients
1 T mayonnaise
1 T yogurt
1 T milk (as needed)
1/4 C Parmesan cheese, grated
1/2 cl garlic, minced
1 lb tomatoes, cored, 1-inch chunks, or halved cherries
1 ea fennel bulb, trimmed and sliced thin
1/4 C red onion, sliced thin
1/4 C basil, sliced thin
8 oz ham, bite-size chunks
Instructions
Whisk together the mayonnaise and yogurt, thinning with milk as needed, then mix in the cheese and garlic. Season to taste.
Toss with the tomatoes, ham, fennel, onion and basil.
Plate and serve chilled.
